Working with sugarpaste or fondant icing.
I found that it best to buy sugarpaste or fondant from your supermarket or catering store, If you can't find it in the shops you can try the following recipe:
Sugarpaste (rolled fondant/ plastic icing)
500 g icing sugar
1 egg white
30 ml liquid glucose
Place the icing sugar into a bowl and make a well in the centre.
Tip the egg white and glucose into the well and stir in using a wooden spoon.
Finish binding the icing together with your hands kneading until all the sugar is incorporated and the icing feels silky and smooth.
Double wrap immediately in two small plastic bags or cling film. It may be used straightaway.

How much sugarpaste/fondant do you use to cover a cake?
6" cake - 500g fondant
7" cake - 750g fondant
8" cake - 1 kg fondant
9" cake - 1,25 kg fondant
10" cake - 1.5 kg fondant
12" cake - 2 kg fondant.
How to cover a cake:
Knead the required amount of sugarpaste into a smooth shape on a work surface, dusted with icing sugar or covered with white margarine to keep it from stucking to the surface. The sugarpaste need to be knead enough to prevent it from cracking if you covered the cake.
Roll out the sugarpaste large enough to cover the top and sides of the cake.
Smooth the icing to get rid of any rolling pin marks.
Slide both hands, palms up, under the rolled out sugarpaste, so you can lift it in one piece without stretching it, or you can roll the fondant lithtly over a roller to transfer it to the cake.
The cake should be covered with buttercream icing or apricot jam to help the fondant to stick to the cake.
When you cover a fruit cake, cover with marzipan first and then with fondant.
Tips:
- If you make figurines or flowers with sugarpaste, mix a little bit of cmc/tylose powder in to make the sugarpast a bit firmer.
- If your sugarpast is to hard and stiff put it in the microwave for 10 to 20 seconds and then try to knea it again.
